J had seen a recipe he thought looked tasty, having to do with tomatoes and feta cheese. It also called for cucumbers and some sort of italian vinaigrette, of which we had neither. But we did have some edamame beans and our trusty olive oil/mustard/lemon juice (or apple cider vinegar)/black pepper dressing. All I had to do was carve the pulp and seeds out of each tomato, toss the feta and beans in the dressing, stuff, and voila! A tasty and beautifully colored crowd pleaser. This one'll have to go on our list of easy yet slightly impressive things to make when entertaining. We ended up pairing it with sauteed spinach and pan-seared lamb shanks. Delish.
